Christmas Baking // Cupcakes // Holidays With Hannah

I am in no way an expert baker...to be honest I'm not great at it but I do love it and always give it a go around the Christmas season. This year I decided to make vanilla cupcakes.


-100g Self Raising Flour
-100g Caster Sugar
-100g Butter (Recommend Stork)
-2 Large Eggs
-A Teaspoon Of Vanilla Extract
-A Heaped Teaspoon Of Baking Powder
-Food Colouring (Optional)
-Sprinkles (I used some snowman ones from Morrisons)
-Icing Sugar


-Mixing Bowl
-Muffin Tray
-Cupcake Cases


-Preheat your oven to 180°c.
-Then prepare everything ready to go. Line your muffin tray with the paper cases and set that to the side. Then measure out all your ingredients.
-Get your mixing bowl and sift in the 100g of flour and caster sugar. I like to mix these together first and make sure it's really fine.
-Then put the 100g of butter in and start to gentle mix that so it's distributed. Crack in the two eggs, add a teaspoon of vanilla extract, a heaped teaspoon of baking powder and if you fancy add some food colouring.
-Mix it together well until it becomes a smooth consistency.
-Fill the cupcake cases with the mixture so they are about 1/3 to half way full.
-Place them in the oven to bake for 12-15 mins just until they are sponge-y to the touch.
-When the cakes are finished take them out and place them on a cooling tray for around 10 mins. While they're cooling prepare your icing sugar.
-You will need to sift the 100g of icing sugar into a mixing bowl. Add a tablespoon of warm water and mix, keep adding small amounts of water until you get the right consistency.
-Get your icing and place it into a piping bag and once the cupcake are cool start to pipe it onto the cakes.
-Then sprinkle or add the decorations you like.

I actually added blue food colouring to my cupcake mixture but they look more green in this photo: 

And you are done!
